  • 1.5 lbs (680g) boneless, skinless chicken breasts or cutlets

  • 1.5 lbs (680g) baby gold potatoes, halved

  • 2 tablespoons olive oil

  • 4 tablespoons unsalted butter, divided

  • 6 garlic cloves, minced

  • 1 cup (240ml) heavy cream

  • ¾ cup (75g) freshly grated parmesan cheese

  • 1 teaspoon Italian seasoning

  • ½ teaspoon paprika

  • ½ teaspoon onion powder

  • Salt and black pepper, to taste

  • ¼ cup chopped fresh parsley (for garnish)


Instructions

Start by seasoning your chicken generously with salt, pepper, paprika, and onion powder. In a large oven-safe skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken and sear for about 4–5 minutes per side until golden and cooked through. Remove the chicken and set aside.

In the same skillet, melt the remaining butter and sauté the garlic until fragrant, about 30 seconds. Add the heavy cream, Italian seasoning, and grated parmesan cheese. Stir continuously until the sauce is smooth, creamy, and slightly thickened. Taste and adjust seasoning as needed.

Meanwhile, toss your halved potatoes in a bowl with a little olive oil, salt, and pepper. Nestle them into the sauce, cut side down. Add the seared chicken back to the pan on top of the potatoes. Carefully transfer the skillet to a preheated oven at 400°F (200°C) and roast for about 25–30 minutes, or until the potatoes are tender and the sauce is bubbling.

 

Once done, remove the skillet from the oven and let it rest for a few minutes. Finish with a generous sprinkle of chopped fresh parsley for color and brightness. Serve immediately and watch everyone dive in.

Notes

While this recipe is fairly easy, a few common mistakes can affect the final result. One of the most frequent is overcooking the chicken. Keep an eye on the sear and don’t leave it in the oven too long, or it may dry out. Use a meat thermometer if needed—the internal temperature should reach 165°F (74°C).

 

Another mistake is using low-quality parmesan or skipping the sauté step for the garlic. These small shortcuts can lead to a less flavorful or uneven sauce. Also, avoid overcrowding the pan. The potatoes should have space to crisp up slightly in the sauce. Finally, don’t forget to taste the sauce before baking and adjust the seasoning as needed.
