- ¼ tsp allspice
- ⅓ cup panko breadcrumbs
- ¼ cup all-purpose flour
- 2 tbsp nutritional yeast

Grilled Corn Side (optional):

- 1 clove garlic, grated
- Juice of ½ a lime
- 1 tsp Tajín
- Pinch of salt
For Serving:
- Whole grain burger buns
- Avocado, pickled onions, lettuce, tomato, or chipotle mayo (optional toppings)
Instructions
- Preheat Oven: Preheat oven to 425°F (218°C). Line a baking tray with parchment paper.
- Sauté Aromatics: Heat avocado oil in a skillet. Add diced red onion and sauté with a pinch of salt for 5 minutes until softened.
- Crisp Tofu: Add crumbled tofu and cook undisturbed for 3–4 minutes. Flip and cook 3–4 minutes more until golden.
- Season: Stir in tamari, bouillon cube, garlic powder, Tajín (1 tsp), coriander, and allspice. Cook 1 minute, then remove from heat to cool.
- Form Patties: In a mixing bowl, combine tofu mixture with breadcrumbs, flour, nutritional yeast, lime juice and zest. Mix and knead until it forms a dough. Add water or breadcrumbs if needed.
- Shape and Bake: Form into 4 patties, about ½ inch thick. Place on baking tray and bake for 15 minutes.
- Baste: Mix adobo sauce, maple syrup, and Tajín (½ tsp). Brush onto patties, flip, baste the other side, and bake for another 15 minutes.
- Rest and Serve: Let patties rest 5–10 minutes. Serve on toasted buns with desired toppings.
- Grill Corn: Optional: Grill corn on medium-high heat, rotating to char all sides. Brush with garlic-lime-Tajín mix before serving.
Notes
- Use super-firm tofu for the best structure—avoid soft tofu.
- Parchment paper prevents sticking during baking.
- Freeze uncooked patties with parchment between layers for easy storage.
- Make it gluten-free: Use GF panko and oat flour instead of all-purpose.
- Pan-fry option: Cook 4–5 minutes per side in a non-stick skillet.
