Description

These Chipotle Lime Tofu Burgers are smoky, spicy, and zesty—made with super-firm tofu, chipotle adobo sauce, lime, and bold seasonings. Baked to perfection and brushed with a sweet-spicy glaze, they’re protein-packed and 100% plant-based.


Ingredients

Tofu Burgers:

  • 1 tbsp avocado oil (plus more as needed)
  • ½ red onion, finely diced
  • 1 block super firm tofu, finely crumbled
  • 1 tbsp tamari or soy sauce
  • 1 vegan bouillon cube, crumbled
  • 1 tsp garlic powder
  • 1½ tsp Tajín or chili lime seasoning
  • ½ tsp ground coriander
  • ¼ tsp allspice
  • ⅓ cup panko breadcrumbs
  • ¼ cup all-purpose flour
  • 2 tbsp nutritional yeast
  • Juice and zest of 1 lime

Chipotle Glaze:

  • 4 tbsp adobo sauce (from canned chipotle peppers)
  • 2 tbsp maple syrup
  • ½ tsp Tajín

Grilled Corn Side (optional):

  • 4 ears of corn, husked
  • 1 clove garlic, grated
  • Juice of ½ a lime
  • 1 tsp Tajín
  • Pinch of salt

For Serving:

  • Whole grain burger buns
  • Avocado, pickled onions, lettuce, tomato, or chipotle mayo (optional toppings)

Instructions

  1. Preheat Oven: Preheat oven to 425°F (218°C). Line a baking tray with parchment paper.
  2. Sauté Aromatics: Heat avocado oil in a skillet. Add diced red onion and sauté with a pinch of salt for 5 minutes until softened.
  3. Crisp Tofu: Add crumbled tofu and cook undisturbed for 3–4 minutes. Flip and cook 3–4 minutes more until golden.
  4. Season: Stir in tamari, bouillon cube, garlic powder, Tajín (1 tsp), coriander, and allspice. Cook 1 minute, then remove from heat to cool.
  5. Form Patties: In a mixing bowl, combine tofu mixture with breadcrumbs, flour, nutritional yeast, lime juice and zest. Mix and knead until it forms a dough. Add water or breadcrumbs if needed.
  6. Shape and Bake: Form into 4 patties, about ½ inch thick. Place on baking tray and bake for 15 minutes.
  7. Baste: Mix adobo sauce, maple syrup, and Tajín (½ tsp). Brush onto patties, flip, baste the other side, and bake for another 15 minutes.
  8. Rest and Serve: Let patties rest 5–10 minutes. Serve on toasted buns with desired toppings.
  9. Grill Corn: Optional: Grill corn on medium-high heat, rotating to char all sides. Brush with garlic-lime-Tajín mix before serving.

Notes

  • Use super-firm tofu for the best structure—avoid soft tofu.
  • Parchment paper prevents sticking during baking.
  • Freeze uncooked patties with parchment between layers for easy storage.
  • Make it gluten-free: Use GF panko and oat flour instead of all-purpose.
  • Pan-fry option: Cook 4–5 minutes per side in a non-stick skillet.
