This Cherry Tomato Balsamic Avocado Toast is fresh, flavorful, and easy to make! A healthy and delicious breakfast or snack in just 10 minutes.


Ingredients

For the Avocado Mash:

  • 1 large ripe avocado
  • ½ teaspoon lemon juice
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

For the Cherry Tomato Topping:

  • 1 cup cherry tomatoes, halved
  • 1 teaspoon olive oil
  • ½ teaspoon balsamic vinegar
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

For the Toast:

  • 2 slices of sourdough or whole-grain bread
  • 1 teaspoon olive oil (for brushing)

Optional Toppings:

  • Fresh basil or parsley, chopped
  • Crumbled feta or goat cheese
  • Red pepper flakes for heat

Instructions

1. Prepare the Avocado Mash

  1. Scoop the avocado into a bowl and mash with a fork.
  2. Add lemon juice, salt, and black pepper.
  3. Stir until smooth and set aside.

2. Toast the Bread

  1. Brush bread slices with olive oil.
  2. Toast in a skillet over medium heat for 2-3 minutes per side or use a toaster until golden brown.

3. Make the Cherry Tomato Topping

  1. In a bowl, toss cherry tomatoes with olive oil, balsamic vinegar, salt, and black pepper.
  2. Let sit for a few minutes to absorb the flavors.

4. Assemble the Avocado Toast

  1. Spread mashed avocado evenly over toasted bread.
  2. Top with cherry tomatoes.
  3. Garnish with fresh basil, crumbled feta, or red pepper flakes if desired.
