This Cheesy Hamburger Rice Casserole is a family-friendly comfort food classic made with ground beef, tender rice, melted cheddar, and creamy soups. Perfect for weeknights, meal prep, or feeding a crowd, it’s an easy casserole recipe that’s both hearty and budget-friendly.
Ingredients
1 pound ground beef (80/20)
1 small onion, finely chopped
2 cloves garlic, minced
1 cup uncooked long-grain white rice
2½ cups beef broth
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
1 cup shredded cheddar cheese (plus extra for topping)
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
1 tablespoon Worcestershire sauce
Optional: chopped parsley for garnish
Instructions
Preheat oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned. Add onion and garlic, and sauté for 3–4 minutes.
Drain excess grease and stir in Worcestershire sauce, salt, pepper, and paprika.
In a large mixing bowl, combine rice, soups, and beef broth. Stir until smooth.
Fold in the beef mixture and 1 cup of shredded cheese. Mix well.
Pour into the prepared baking dish. Top with extra cheese.
Cover with foil and bake for 45 minutes. Remove foil and bake 10–15 minutes more, until bubbly and rice is tender. Garnish with parsley if desired.
Notes
Let the casserole rest for 5 minutes before serving to allow it to set.
You can swap in ground turkey or brown rice.
Store leftovers in an airtight container in the fridge for up to 4 days.
