Ingredients
Scale
- 2 (16-ounce) cans refried beans – The base of the dip, providing a rich, creamy texture.
- 1 (8-ounce) package cream cheese (softened) – Adds a smooth, tangy richness.
- 1 cup sour cream – Enhances the creaminess and balances the flavors.
- 1 (1-ounce) packet taco seasoning – Gives the dip a bold, Tex-Mex flavor.
- 2 cups shredded Mexican blend cheese – A mix of cheddar, Monterey Jack, and other cheeses for melty goodness.
- 1 cup shredded pepper jack cheese – Adds a hint of spice and extra cheesiness.
- 1 teaspoon garlic powder – Enhances the overall flavor.
- ½ teaspoon onion powder – Complements the garlic and taco seasoning.
- ½ teaspoon smoked paprika – Adds a mild smoky depth.
- ½ cup diced green chilies (optional) – Provides a little extra heat and flavor.
- ¼ cup chopped fresh cilantro (optional) – A fresh, herbal finishing touch.
Instructions
- Preheat the oven – Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Mix the base ingredients – In a large mixing bowl, combine the softened cream cheese, sour cream, and refried beans. Use a hand mixer or a spatula to blend until smooth.
- Add the seasonings – Stir in the taco seasoning, garlic powder, onion powder, and smoked paprika. Mix well to ensure even distribution of flavors.
- Fold in the cheese – Add 1 ½ cups of the Mexican blend cheese and ½ cup of the pepper jack cheese. Stir until evenly combined.
- Assemble the dip – Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining cheese over the top, ensuring full coverage.
- Bake the dip – Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish and serve – Remove from the oven and let it cool slightly. Sprinkle with chopped cilantro and diced green chilies, if using. Serve warm with tortilla chips, crackers, or sliced veggies.
Notes
- Skipping the softening step for cream cheese – Cold cream cheese won’t blend smoothly.
- Overbaking the dip – This can dry out the top layer, so keep an eye on it.
- Using low-fat ingredients – This may affect the creaminess and flavor.
