  • 1 (8 oz) package cream cheese, softened

  • 1 cup sour cream

  • 1 packet taco seasoning (about 1 ounce)

  • 2 cups shredded Mexican blend cheese (or cheddar, Monterey Jack, or a mix)

  • 1 cup shredded pepper jack cheese (optional, for a spicier kick)

  • Optional toppings: sliced green onions, chopped black olives, diced jalapeños, or fresh cilantro

  • Dippers: tortilla chips, sliced bell peppers, celery sticks, pita chips, or crackers


Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or spray it with non-stick cooking spray to ensure easy cleanup.

Step 2: In a large mixing bowl, combine the refried beans, softened cream cheese, sour cream, and taco seasoning. Stir until everything is fully mixed and the texture is smooth and creamy. If your cream cheese isn’t quite soft enough, you can microwave it for 15 seconds to make mixing easier.

Step 3: Spread the bean mixture evenly into the prepared baking dish. Use a spatula to smooth the top and make sure the mixture is level throughout the pan.

Step 4: Sprinkle the shredded cheese generously over the top of the dip. You can use just Mexican blend or combine it with pepper jack for extra heat. Don’t be shy—the cheese layer should be thick and fully cover the dip.

Step 5: Bake the dip in the preheated oven for 25–30 minutes, or until the cheese is melted, bubbly, and golden brown around the edges.

Step 6: Remove the dish from the oven and let it cool slightly before serving. Add your desired toppings such as sliced green onions, chopped olives, diced jalapeños, or fresh cilantro.
