  • 3 large uncooked shrimp per person, peeled and deveined
  • ¾ lb smoked sausage (Andouille or Polish), sliced
  • 1 tbsp olive oil (for searing)
  • Prepared Cajun spice mix (see below)
  • ½ medium yellow onion, finely diced
  • 1 red bell pepper, finely diced
  • 2 celery stalks, finely diced
  • 3 garlic cloves, grated
  • 1 cup basmati rice
  • 1 cup chicken stock
  • 1 (15 oz) can fire-roasted chopped tomatoes
  • 1 tbsp tomato paste
  • Juice of ½ lemon
  • 34 sprigs fresh parsley, chopped

Cajun Spice Mix: 1 tsp smoked paprika, 1½ tsp garlic powder, 1½ tsp onion powder, ¾ tsp dried oregano, ¾ tsp dried thyme, ¾ tsp black pepper, 1 tsp kosher salt, ¼ tsp cayenne pepper.


Instructions

  1. Make Cajun spice mix: Combine all spices in a small bowl; set aside.
  2. Prepare shrimp & sausage: Season shrimp lightly with spice mix. Heat 1 tbsp olive oil in large skillet over medium-high; sear sausage 2–3 min, remove. Sear shrimp 1–2 min per side, remove.
  3. Cook aromatics: Add another 1 tbsp oil to skillet. Sauté onion, bell pepper, and celery 4 min; add garlic, cook 30 sec.
  4. Build base: Stir in tomato paste, cook 1 min. Add rice, stir to coat. Pour in chicken stock, tomatoes with juice, and remaining spice mix. Stir well.
  5. Simmer: Bring to a low boil, reduce heat, cover, and cook 15–18 min until rice is tender.
  6. Finish: Return shrimp and sausage to skillet; stir, heat through 2–3 min. Squeeze lemon juice over top.
  7. Serve: Garnish with parsley and serve hot.

  • Vegetarian: Replace shrimp & sausage with chickpeas or tofu, use vegetable broth.
