Description
Make tender Cajun roast beef po’ boys with spicy gravy, fresh veggies, and mayo. Perfect sandwich for lunch or dinner!

- 1 tablespoon oil
- 1 (2-3 pound) beef roast (chuck, eye of round, or your choice)
- 2 tablespoons Cajun seasoning, divided
- 1 onion, sliced or diced
- 1–2 cups beef broth (1 cup for slow cooker, 2 cups for stovetop/oven)
- 1 tablespoon Worcestershire sauce (gluten-free if needed)
- 1 tablespoon cornstarch
- 1 tablespoon water
- 6 (12-inch) hoagie rolls or buns
- 6 tablespoons mayonnaise
- 2 cups shredded lettuce
- 2 large tomatoes, thinly sliced
- ½ cup sliced pickles
Instructions
- Heat oil in a large oven-safe pan over medium-high heat. Season beef roast with 1 tablespoon Cajun seasoning. Brown the beef on all sides.
- Add sliced onions, beef broth, Worcestershire sauce, and remaining Cajun seasoning to the pan.
- Choose your cooking method:
- Stovetop: Boil, then simmer covered for 2-4 hours until tender.
- Oven: Preheat to 275°F, cover pan, cook 2-4 hours until tender.
- Slow Cooker: Cook on LOW for 8-10 hours or HIGH for 4-6 hours.
- Remove beef and shred with two forks.
- Make slurry with cornstarch and water, add to boiling cooking liquid and simmer until thickened.
- Mix shredded beef back into gravy until coated.
- Slice hoagie rolls, spread mayonnaise, layer beef mixture, lettuce, tomato slices, and pickles.
- Serve immediately; add hot sauce if desired.
Notes
- Slow cooker method is easiest without browning.
- Adjust Cajun seasoning to taste.
- Toast rolls lightly for added crunch.
- Add pickled jalapeños or banana peppers for spice.
