Description

This buffalo chicken cheesesteak recipe is spicy, cheesy, and easy. Perfect for quick dinners or game day sandwiches.

Ingredients

Scale
  • 1 lb boneless skinless chicken breasts or thighs, thinly sliced

  • 1 tablespoon olive oil

  • 1 green bell pepper, thinly sliced

  • 1 small onion, thinly sliced

  • ½ cup buffalo wing sauce (store-bought or homemade)

  • 4 hoagie rolls or sub rolls

  • 4 slices provolone cheese

  • Salt and black pepper to taste

  • Optional: ranch or blue cheese dressing for serving

Instructions

To make the buffalo chicken cheesesteak step by step, start by prepping your ingredients. Slice the chicken into thin strips, season it lightly with salt and pepper, and set aside. Heat olive oil in a large skillet over medium-high heat. Add the onions and peppers, cooking for about 5 to 6 minutes or until they become soft and slightly caramelized. Once the vegetables are tender, remove them from the skillet and set aside.

In the same skillet, add the chicken and cook for about 6 to 8 minutes, stirring occasionally, until it’s cooked through and lightly golden. Once the chicken is fully cooked, pour in the buffalo sauce and stir to coat evenly. Simmer for a few minutes to let the flavors meld and the sauce thicken slightly. Now, return the peppers and onions to the pan and mix everything together.

Next, preheat your oven broiler or toaster oven to high. Slice the hoagie rolls open but not all the way through, and lay them on a baking sheet. If you like a crispy roll, toast them for a minute or two before assembling the sandwich. Once the bread is ready, spoon the buffalo chicken mixture evenly into each roll. Top each sandwich with a slice of provolone cheese and place the baking sheet under the broiler just until the cheese is melted and bubbly, which usually takes about 1 to 2 minutes.

Notes

For an extra boost of flavor, consider adding a splash of vinegar or lemon juice to the pan when sautéing the onions and peppers. This brings out their sweetness and balances the heat of the buffalo sauce. You can also mix the cheese directly into the chicken mixture if you prefer a fully integrated cheesy filling. Alternatively, add an extra layer of cheese under the filling inside the roll for even more melty goodness.
