This Berry Croissant Bake is a flaky, buttery, and fruit-filled breakfast casserole, perfect for brunch or holidays!

For the Casserole:

  • 56 large croissants, cut into chunks
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries, or blackberries)
  • 4 large eggs
  • 1 ½ cups (360ml) whole milk
  • ½ cup (120ml) heavy cream
  • ½ cup (100g) granulated sugar
  • 1 tablespoon vanilla extract
  • ½ teaspoon cinnamon (optional)

For the Topping (Optional):

  • ¼ cup (30g) powdered sugar (for dusting)
  • ½ cup whipped cream or Greek yogurt
  • Maple syrup or berry sauce for serving

Instructions

1. Preheat & Prep

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.

2. Assemble the Casserole

  1. Cut croissants into bite-sized pieces and spread them evenly in the baking dish.
  2. Sprinkle fresh berries over the croissants.

3. Make the Custard

  1. In a mixing bowl, whisk together eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon (if using).
  2. Pour the custard mixture evenly over the croissants and berries, ensuring all the pieces are soaked.

4. Bake Until Golden

  1. Let the mixture sit for 5-10 minutes to absorb the custard.
  2. Bake for 35-40 minutes, until the top is golden brown and set.
  3. Let cool for 5 minutes before serving.

5. Add Toppings & Serve

  1. Dust with powdered sugar and drizzle with maple syrup or berry sauce.
  2. Serve warm with whipped cream or Greek yogurt on the side.

Notes

Use day-old croissants – Slightly stale croissants absorb the custard better.
Let the custard soak in – Letting it sit for 10 minutes before baking enhances flavor.
Use a mix of berries – This adds a variety of flavors and colors.
