Description

These Banana Pudding Truffles are creamy, no-bake treats made with vanilla wafers, banana pudding, and a white chocolate coating!

Ingredients

Scale

For the Truffles:

  • 1 ½ cups crushed vanilla wafers (about 40 cookies)
  • 4 oz (113g) cream cheese, softened
  • ⅓ cup instant banana pudding mix (dry, not prepared)
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (as needed for consistency)

For the Coating & Topping:

  • 12 oz (340g) white chocolate or white candy melts
  • 1 tablespoon coconut oil (optional, for smooth melting)
  • ¼ cup crushed vanilla wafers (for garnish)
  • Banana chips or sprinkles (optional, for extra decoration)

Instructions

1. Make the Truffle Dough

  1. In a food processor, pulse vanilla wafers into fine crumbs.
  2. In a bowl, mix together cream cheese, banana pudding mix, and vanilla extract until smooth.
  3. Add crushed vanilla wafers and mix until fully combined.
  4. If the dough is too dry, add 1-2 tablespoons of milk until it holds together.

2. Roll the Truffles

  1. Using a spoon or small cookie scoop, roll the mixture into 1-inch balls.
  2. Place on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.

3. Melt the White Chocolate

  1. In a microwave-safe bowl, melt white chocolate and coconut oil in 30-second intervals, stirring between each, until smooth.
  2. Alternatively, use a double boiler on low heat to melt the chocolate.

4. Coat the Truffles

  1. Dip each truffle into the melted white chocolate using a fork or dipping tool.
  2. Let excess chocolate drip off, then place back on the parchment-lined sheet.
  3. Immediately sprinkle with crushed vanilla wafers or banana chips for garnish.

5. Chill & Serve

  1. Refrigerate for 15-20 minutes until the chocolate sets.
  2. Serve chilled and enjoy these creamy, banana-filled bites!

Notes

✔ Use high-quality white chocolate – Melts smoother and tastes better.
✔ Chill before dipping – Keeps the truffles firm and easier to coat.
✔ Add a banana chip on top – For extra crunch and decoration.
