Description
This authentic Irish potato bread is tender, rustic, and golden — made with mashed potatoes, flour, and butter, cooked on the stovetop for a classic Irish side everyone will love.

- 750 grams (1.65 lbs) potatoes, peeled and quartered
- 30 grams (6 tsp) butter, melted
- 225 grams (1 ½ cups) plain flour, plus extra for dusting
- Good pinch of salt (omit if using salted butter)
- Extra butter and olive oil, for frying
Instructions
- Cook the potatoes: Place peeled, quartered potatoes in a pot of cold water. Bring to a boil, simmer 15–20 minutes until tender. Drain and let cool slightly.
- Mash the potatoes: Mash or rice the potatoes in a bowl until smooth and lump-free.
- Make the dough: Add melted butter, flour, and salt. Stir with a spoon, then knead lightly by hand until a soft dough forms. Add more flour if sticky.
- Roll out: On a floured surface, divide dough into six balls. Roll each into a thin round (3mm–½cm thick). Cut into quarters if desired.
- Fry: Heat a pan over medium, add olive oil and butter. Cook dough pieces until golden on both sides and cooked through. Repeat with remaining dough. Serve warm.

- Let potatoes cool slightly before mixing for easier handling.
- Do not overwork the dough — it should stay soft and tender.
