Description

Make this rich, sweet Alabama Pecan Bread for breakfast, dessert, or gifts. An easy homemade bread recipe everyone loves.

Ingredients

Scale
  • 1 cup all-purpose flour

  • 1 cup chopped pecans (toasted if desired)

  • 1 cup granulated sugar

  • 1/2 cup packed light brown sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 1/2 cup vegetable oil or melted butter

  • 1 teaspoon vanilla extract

Optional Add-ins:

  • 1/4 cup sour cream or softened cream cheese for richness

  • 1 teaspoon lemon zest for a lemon cream cheese variation

  • 1/2 teaspoon cinnamon or nutmeg for added spice

Instructions

  • Preheat the oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper for easy removal.

  • Mix dry ingredients: In a large bowl, whisk together the flour, sugars, baking powder, and salt until well combined.

  • Add wet ingredients: In a separate bowl, beat the eggs, then whisk in the oil (or melted butter) and vanilla. For a richer version, stir in the sour cream or cream cheese.

  • Combine: Pour the wet mixture into the dry ingredients and gently stir until just combined. Fold in the chopped pecans, being careful not to overmix.

  • Pour into pan: Transfer the batter into the prepared loaf pan and smooth the top with a spatula.

  • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown and slightly cracked.

  • Cool: Let the bread rest in the pan for 10 minutes before transferring to a cooling rack. Allow to cool fully before slicing.

Notes

  • Overmixing the batter: This can result in a tough or dense loaf.

  • Using cold ingredients: Causes uneven texture and poor rise.

  • Skipping the cooling time: Makes slicing difficult and can alter the texture.

  • Not testing doneness: Always use a toothpick in the center to check.
